LAS VEGAS— Gold Coast Hotel & Casino today announced the debut of Charter 75 Modern Kitchen – an all-new gastropub experience that serves as centerpiece of a major expansion of Gold Coast’s dining experiences.
In addition to the opening of Charter 75, Gold Coast will also welcome two new fast-casual dining options in February – Steak ‘n Shake, renowned nationwide for its Steakburger and homemade milkshakes; and Tacos el Pastor, a local Mexican restaurant chain offering a delicious take on Northern Mexican street food.
Charter 75’s menu features a wide range of elevated comfort dishes and gastropub favorites. Guests will find starters such as a jumbo pretzel with coarse salt, ale house cheese fondue and stone‑ground mustard; bahn mi sliders, featuring shaved pork, hoisin, pickled vegetables and jalapeño on a potato bun; cheesesteak egg rolls featuring shaved prime rib, provolone and sauteed onions; and Baja rock shrimp with Dos Equis® beer batter, chilis, chipotle crema, cilantro and lime. Entrées include baby back ribs with BBQ sauce, house slaw and waffle fries (available as a full or half rack); Scottish salmon served with a grilled filet, lemon‑butter sauce, mashed potatoes and seasonal vegetables; steak and fries featuring a center‑cut 12-ounce New York strip with herb butter and parmesan‑garlic fries; a ranch-style bison burger with a char-broiled 8-ounce bison patty, griddled potato bun, sauteed onion, bacon, BBQ sauce and cheddar cheese; and fish and chips with beer‑battered cod, slaw, waffle‑cut fries and tartar sauce.
Charter 75 is designed as a warm, high‑energy gathering place that blends modern comfort with classic Las Vegas character. The space centers on a vibrant bar surrounded by rich wood finishes, soft amber lighting and bold graphic accents that create a lively, welcoming backdrop. Deep‑tone furnishings and industrial metal details add a refined edge, while plush seating and layered textures bring a sense of ease to both casual meals and late‑night cocktails. Throughout the room, thoughtful lighting and contemporary décor contribute to an atmosphere that feels both polished and relaxed, positioning the gastropub as a stylish hub for guests meeting friends, catching a game or settling in for an elevated dining experience.
The restaurant will offer a full bar with a curated selection of spirits, wine, modern classic cocktails and 24 draft beers. Weekend entertainment in the lounge will begin on Fridays and Saturdays starting the first Friday in March.
The gastropub will welcome guests for breakfast, lunch and dinner, opening daily at 7 a.m. The main dining room remains open through 9 p.m. Sunday through Thursday and extending to 10 p.m. on Friday and Saturday.
The bar and lounge will be open daily from 11 a.m. through 10 p.m. on weeknights and until 11 p.m. on weekends.
Steak ’n Shake will operate 24 hours a day, seven days a week. Tacos el Pastor will be open from 11 a.m. to 9 p.m. Sunday through Thursday, and until 10 p.m. Fridays and Saturdays.
The new restaurants join Gold Coast favorites Ping Pang Pong, widely recognized as one of Las Vegas’ favorite Chinese restaurants; local noodle bar favorite Noodle Exchange and Cornerstone Classic American Steakhouse, offering an elegant and classic steakhouse experience featuring Strip quality fare at a local price.
