The renovation introduces a redesigned interior featuring warm wood finishes, layered textures, intimate dining spaces and a vibrant central bar. The updated layout enhances flow and comfort, while new architectural details and lighting add depth and sophistication to the space.
Alongside the design transformation, William B’s has expanded and refined its menu to highlight premium ingredients, elevated preparations and a broader range of steakhouse favorites. Guests will find an enriched selection of starters, including Shrimp De Jonghe, a classic Chicago dish, with butter, garlic and sherry; Oysters Rockefeller; Oysters Bienville with tasso ham and forest mushrooms; Lobster Escargot with cognac and truffle Gouda; Jumbo Lump Crab Cake with brown butter corn purée; Spanish Octopus with smoked almond romesco; Wagyu Meatballs; roasted bone marrow with bacon jam; steak tartare; and signature indulgences such as Caviar Crown Tater Tots and Wagyu Hot Stone presentations.
A robust raw and chilled seafood program features fresh-shucked East Coast oysters, jumbo shrimp cocktail, tuna poke and multi‑tiered seafood platters designed for sharing.
